Veggie Lasagne

As a student it can be really rather annoying when you've had a full day at uni, you have more reading to do for the next day, and you get home and realise you also have to cook your own dinner, wheres mum when you need her? For this reason, it is such a great idea to cook more food than necessary so that you can freeze it and then reheat it through when your running low on time/energy. A great example of this is a lasagne. Not many shops tend to sell one portion oven dishes, so it is likely that you would make more than one portion whether you intended to or not. I made this particular lasagne with Quorn mince as I happened to have some left over, but you can also make it with vegetables or lentils, be inventive!

Quorn Lasagne

Ingrediants

  • Lasagne Sheets
  • Quorn Mince
  • A small onion/half a large onion
  • Tomato sauce
  • White Sauce
  • Little bit of olive oil

Method

  • Preheat the oven to about 180 degrees. 
  • Put a little bit of oil in a pan and put it on the hob on a low heat to warm up.
  • Now chop up some onions/vegetables if you're using them and put them into the pan. Add the Quorn mince. 
  • Fill a bowl with boiling water and place the lasagne sheets into it to soak
  • When the lasagne sheets are soft and the onions and mince have been cooked through, start to layer your lasagne in the oven dish.
  • First i put a layer of lasagne, then a layer of mince, followed then by the tomato sauce and finally the white/cheese sauce. Then continue to follow these steps until the dish is full/you've run out of filling! Pesonally I also put a bit of both sauces on the top layer of pasta as I like my lasagne to be saucier.
  • Then pop it in the over for about 20 minutes. 
  • Additionally there is also the option to grate some cheese onto the top of your lasagne. I would do this with about 5/10 minutes to go so that the cheese does not burn
  • Take it out the oven and serve! I served mine with a side of salad. Enjoy!
